Beef Nacho Casserole

Do you have a go-to recipe? This one is mine. It’s easy to make and the perfect meal for a new neighbor or new mom. I’ve given away so many!

Ingredients:

1 lb. of ground beef (I sometimes use ground turkey, which messes with the title.)
1 jar of chunky salsa (12 oz.)
1 c. frozen sweet corn, thawed, drained
3/4 c. Hellman’s mayonnaise
1 can of black beans (drained and rinsed, use as much or as little as you want)
1 T. chili powder
2 c. crushed tortilla chips (divided)
2 c. shredded Colby/Monterey Jack cheese

Directions:
  • Heat oven to 350° F
  • Brown meat; drain. Stir in salsa, corn, black beans, mayonnaise, and chili powder.
  • Layer 1/2 each of the meat mixture, chips, and cheese in a 2-quart casserole.
  • Repeat layers.
  • Bake for 20 minutes or until thoroughly heated.

 

Prepare ahead of time and toss in the oven when ready to eat! Serve with a salad and fruit. Makes 6 servings.
