Friends, it’s that time of year when pumpkin tastes good in almost anything. I’ll admit I’m not a big pumpkin flavor fan, but I do like some pumpkin bread. A friend shared this recipe with me a long time ago. She often baked mini loaves, visited her husband’s office with her three boys, and gave them away. Over the years, I’ve baked many mini loaves to give away to friends and neighbors. You’ll need two standard-sized bread pans or 6-8 mini loaves with this recipe.
Ingredients:
3 1/2 cups flour
2 tsp. soda
1 1/2 tsp. of salt
1 tsp. nutmeg
1 tsp. pumpkin spice
1 1/2 cups sugar (I cut 1/2 cup of sugar, but if you like it sweeter, use 2 cups)
1 can of pumpkin
2/3 cups water
1 cup oil
4 eggs
Preheat your oven to 350°. Sift all the dry ingredients, including the sugar, in a large bowl. Mix well and add other ingredients, adding the eggs one at a time. Beat until smooth. Pour into the greased pans. For the large loaves, bake for one hour. If baking mini loaves, bake for thirty-five minutes.
Optional: Add walnuts, chocolate chips.
